Tasting Menu of the Langhe

Dining at the Ristorante Locanda Borgo Vecchio is much more than a meal: it is a sensory journey. The menu is designed to guide guests through a voyage of flavours from the Langhe, between iconic dishes and the chef’s personal interpretations.

The dishes offered on our menu are prepared with respect for seasonality and local availability. We use flours produced on our own Tenuta Barone and carefully selected ingredients, such as black truffle and white Alba truffle, the result of meticulous foraging in the Langhe woods.

Seasonal menus with zero-mile ingredients

The menu changes with the rhythm of the land. Each season has its own protagonists: truffle, hazelnut, braised meat, wild herbs. Everything is chosen based on local availability. Suppliers are selected for proximity and production philosophy, favouring natural methods, fresh harvests, and non-intensive farming.

Among the products we are most proud of are the flours grown, harvested and processed directly on our estate, as well as the Salame Cotto di Neive, the result of a secret, registered recipe and produced in the laboratories of our Emporium. The seasonal selections vary from period to period, following the natural cycles of the land.

Those who dine here rediscover ancient flavours made contemporary, and can choose between tasting journeys or individual dishes, always pairable with wines from our cellar. Each season has its own story: the menu adapts to the rhythm of nature and the chef’s creativity.

Our gastronomic journeys can include traditional dishes such as tajarin, stuffed plin, raw meat all’albese or Barbaresco-braised beef, all prepared with high-quality products from the local area.
