Piedmontese cuisine revisited with local ingredients

Here, tradition is not imitated: it is interpreted. Chef Gabriele Piscitelli creates dishes that begin with memory and arrive in the present, using only locally sourced ingredients, carefully selected one by one. The result? A menu that changes with the seasons and tells the most genuine story of the Langa. Each dish is designed to engage with the region’s history: from the humble cuts of peasant cuisine, reimagined with elegance, to the most refined preparations.

The attention is total: the raw materials are carefully selected, favouring seasonal and zero-kilometre ingredients, many of which are grown directly at the Tenuta Barone, owned by the estate. Here, Ottofile corn flour and type 1 flour are harvested and processed, and used in many traditional preparations.

It’s not uncommon to see guests linger after dinner just to watch the hills turn blue, or to exchange a few words with the staff who accompanied them on their journey through flavours. Here, every experience is personalised and lived without haste.

Selected ingredients and seasonality as a philosophy

Nothing is standard: dishes, suppliers and pairings change every week. The bond with local producers is not a marketing choice, but a genuine collaboration based on trust and knowledge.

In summer, ripe fruit finds its way into savoury dishes. In autumn, the scent of truffle fills the dining room. In spring, wild herbs gathered from the hills take centre stage.

Truffle is one of the symbolic ingredients of our cuisine. The Casetta family breeds Lagotto Romagnolo dogs for the search of black truffle, available all year round, and the renowned white truffle of Alba, harvested from October to January in the natural reserves of the Langhe.

La nostra cucina esprime l’identità del territorio anche attraverso piatti iconici realizzati con lavorazioni artigianali. Tra le specialità: carne cruda all’albese, plin di fassona, tajarin fatti a mano, vitello tonnato di Fassona, e brasato al Barbaresco.
