Le <\/span>chef Gabriele Piscitelli<\/strong><\/span> cr\u00e9e des plats qui partent de la m\u00e9moire et arrivent au pr\u00e9sent, en utilisant uniquement des <\/span>ingr\u00e9dients du terroir<\/strong><\/span>, s\u00e9lectionn\u00e9s un \u00e0 un. Le r\u00e9sultat ? Un menu qui change au fil des saisons et raconte la Langa la plus authentique. Chaque plat est con\u00e7u pour dialoguer avec l\u2019histoire du territoire : des morceaux modestes de la cuisine paysanne, r\u00e9interpr\u00e9t\u00e9s avec \u00e9l\u00e9gance, aux pr\u00e9parations les plus raffin\u00e9es.<\/span><\/p>\n

L\u2019attention est totale<\/strong> : les<\/span> mati\u00e8res premi\u00e8res sont soigneusement s\u00e9lectionn\u00e9es, en privil\u00e9giant des <\/span>ingr\u00e9dients de saison et locaux<\/strong>, dont beaucoup sont cultiv\u00e9s directement au <\/span>Tenuta Barone<\/em>, propri\u00e9t\u00e9 de la structure. On y r\u00e9colte et transforme la farine de ma\u00efs <\/span>Ottofile<\/em> et la farine type 1, utilis\u00e9es dans de nombreuses pr\u00e9parations traditionnelles.<\/span><\/p>\n
